Ethan's Spinach Mushroom Quiche
1 pkg. frozen spinach (box)
1 pkg. fresh sliced mushrooms
1 onion, diced
2 cloves garlic, minced
1 pint-sized carton egg beaters
1/2 pound feta cheese (sheep or goat milk preferred)
2 deep-dish pie crusts
salt, pepper, and fresh rosemary to taste
Thaw spinach in microwave, then drain liquid. In
skillet, saute mushrooms, onion, and garlic in real
butter until lightly browned. Add salt and pepper,
stir, and remove from heat to cool. Place in large
bowl and add spinach, feta cheese, and rosemary. Add
egg beaters and mix thoroughly. Spoon evenly into the
two pie crusts. Bake for one hour in oven heated at
350 degrees fahrenheit.
