Ethan's Caramel recipe
2 sticks real butter (salted)
1 pint cream
1 pint half and half
2 cups light Karo corn syrup (real Karo brand)
4-5 cups light brown sugar
Pure vanilla extract to taste
Melt better in 2 quart saucepan, then add brown sugar
and corn syrup. (It's important to use real Karo
brand because many other brands dilute their syrup
with water.) Stir over medium heat for a couple of
minutes. Add cream, half and half, and vanilla.
Continue to stir until everything is thoroughly mixed.
Bring it to a boil, stirring occasionally, and
continue to boil on medium heat until it reaches the
firm-ball stage. Scoop it out with a ladle into two
aluminum cake pans, dividing evenly between the two.
Let it cool for a couple of hours before cutting. It
keeps fine out in the open.
